Starting has to be the hardest thing when it comes to trying new things, there’s the procrastination, the feeling of inadequacy and the imposter syndrome that attaches itself like a leech. It takes just the right kind of push and getting into a mindset where you’re happy, content and just feeling.
I am at the point (can you tell?), I am all for going with the flow now and doing it at my own pace and you should to.

Life Lately:
I recently quit my job (I know, wild) but it was necessary. If you follow me on thelifeofamaka, you would have noticed that at the beginning of the year, I took you through my first week at my new job and you could tell that I was excited.
My excitement dwindled in my 3rd month and I knew that it was time for me to leave. I really won’t go into details of why I left my job with one of the top Nigerian fashion brands, all I’m going to say is that “all that glitters is not gold” lol.

On starting:
I finally got around to starting my YouTube channel (I mentioned this in my last letter) and I have my first video up as a premier scheduled for tomorrow (Sunday 24th)…psst! you get first glimpse
Buttermilk Pancake recipe
I like to think that I make the best pancakes ever (if you haven’t tried it then you’re missing out)
Anyways, here’s my recipe for making the fluffiest pancakes ever (note that you have to use the right tools i.e. non-stick pan)
INGREDIENTS -
1 cup of flour
1/2 tsp of baking powder
1/3 cup of sugar
1 cup buttermilk
2 large eggs
1/2 tsp of vanilla extract
1/8 cup of melted butter/coconut oil
RECIPE -
In a large bowl, combine all dry ingredients together and set aside (baking powder, flour, sugar).
In another bowl, add wet ingredients (buttermilk, eggs, vanilla extract, melted butter) and whisk until combined.
Pour wet ingredients into the dry ingredients and use a spatula to combine it all. Do not worry your cute self about the lumps.
Place a non-stick pan on low heat and scoop the batter into the pan using any measuring cup of your choice to get your desired size.
Cook for 1min and when small bubbles form on top, flip to the other side and cook for another minute.
To make your buttermilk into 1 cup of milk add 1 tbsp. of white vinegar or lemon juice, stir and allow to sit for 5 mins before you use it.
